Cooking Directions:
  1. Heat oven to 375°F.
  2. In bowl, combine flour, bran, sugar, baking powder, baking soda, cinnamon and salt.
  3. Stir apricots into bowl.
  4. Whisk together yogurt, oil, egg, and vanilla.
  5. Stir into flour mix just until combined.
  6. Divide batter evenly among greased muffin tins, filling each 3/4 full.
  7. Bake 20 to 25 minutes or until toothpick inserted in the center comes out clean.
  8. Remove muffins from cups while hot and transfer onto a rack to cool.
